CHICK PEA À LA KING
¼ cup olive oil
2 cloves garlic, chopped fine
1 onion, chopped fine
½ pound small white mushrooms, cut into quarters
1 cup unsalted cashew nuts, ground or chopped fine
15 ounce can chick peas
¼ teaspoon marjoram
¼ teaspoon thyme
¼ teaspoon chervil
1 cup rich soy milk Salt and pepper to taste
||Sauté the garlic, onion, and mushrooms in the oil over low heat until the onions have become soft but not colored.
||Add cashews and chick peas.
||Add marjoram, thyme, and chervil. Slowly stir in soy milk.
|Serve over brown rice or couscous, made with a touch of cayenne pepper and coarsely-chopped green or red peppers.
