Yield: 4-6 Servings

1 pound baby carrots
2 teaspoons finely chopped fresh ginger
1/4 cup Blood Red or Valencia orange juice
2 tablespoons butter or butter substitute
1/2 teaspoon salt
1/2 packet Splenda®

1. Combine ingredients. Bring to a boil in a covered pot. Reduce heat to medium-low. Cook 10 minutes. Turn off heat for flavors to blend.
