CLASSIC FRIED CATFISH
Yield: 4 Servings
2 cups yellow cornmeal
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon cayenne pepper
Optional: 1/2 teaspoon garlic powder
4 large catfish fillets or a 4 whole small catfish
Vegetable oil to half fill a deep skillet

Sift dry ingredients together. |

Cut the catfish into fillets or remove the heads, tails and skin from the whole fish and wash the insides well. |

Heat the oil to 350*F. |

Dip the fish into the batter and shake off excess. Fry until golden brown. Drain on paper towels. |
